2 cups finely chopped cooked ham
1/2 cup sliced green onion
1/2 cup finely chopped green pepper
2-1/2 cups grated cheddar cheese
8 -7" flour tortillas
4 eggs, lightly beaten
2 cups light cream or milk
1 T. flour
1/4 t. salt (optional)
1/4 t. garlic powder
few drops of Tabasco sauce
Avacado slices

In a bowl, combine the ham, onion, and green pepper. Place 1/3 cup of
this mixture and 3 T. cheese at one end of a tortilla. Roll up. Repeat. Arrange the
tortillas seam-side down in a greased 12" x 8" casserole dish. Combine the eggs,
cream, flour, salt, garlic powder and Tabasco. Pour over the tortillas.
Cover and refrigerate several hours or overnight. Remove from the
refrigerator 3/4 hour before baking. Preheat oven to 350 degrees and back 45-60 minutes or
until set. Sprinkle with the remaining cheese. Bake 3 minutes more or until cheese is
melted. Let stand 10 minutes. Garnish with avocado slices, salsa and sour cream.
