WHITE CHILI
|
|
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cubed
1/4 cup chopped onion
1 cup chicken broth
4 oz. can chopped green chiles
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon cilantro
1/4 teaspoon cayenne
19 oz can cannellini beans, undrained
shredded monterey jack cheese and sliced green onions for garnish
Heat oil in a 3-qt. saucepan over medium-high heat. Add chicken and cook 4 to 5 minutes,
stirring often. Remove chicken with a slotted spoon, cover and keep warm. Add chopped
onion to pan, cook 2 minutes. Stir in chicken broth, chiles and spices. Simmer 30 minutes.
Add chicken and beans. Simmer. Serve garnished with cheese and onions.
(This makes a rather small batch. We always double this recipe. It is REALLY good!)
